This soup is really good and easy. Just brown the meat and then add everything else and simmer for about 20 minutes. You can serve it with grated cheese, sour cream, guacamole, and chips. It makes a HUGE pot of soup.
2 lbs ground meat (you can use beef or turkey - both are good)
1 can rotel
2 packages taco seasoning
2 packages hidden valley ranch dressing mix
1 big can diced tomatoes
1 can navy beans
1 can black beans
1 can pinto beans
2 cans shoe peg corn
2 cans water

I have an embarassing question that will display just how much of a Philly girl I am. What section of the grocery store do you find Rotel in? Does it have onions in it?
Joanna, I think I usually find it over with the canned tomatos. (tomatoes?) It's just chopped tomato, green chiles, and some spices - no onion. I used the mild version. Now, I like HOT stuff...grew up in South Texas...but occasionally the original Ro-Tel is just a tad too spicy for what I'm cooking for the family. The mild is a nice option...lots of flavor with just an eety beety kick. Oh, and I used the McCormick Low Sodium Taco seasoning packets...it really helped with the salt.
Made Soup two days in a row. Love the stuff. One pan and no mess. MUD
